Ingredients:
- 2 cups all-purpose flour
- 1/3 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup fresh blueberries
- 1 tablespoon fresh sage leaves, finely chopped
- 2/3 cup heavy cream
- 1 egg
- 1 teaspoon vanilla extract
Instructions:
Preheat your oven to 400F 200C and line a baking sheet with parchment paper
In a large mixing bowl, combine the flour, sugar, baking powder, and salt
Add the cold cubed butter to the dry ingredients
Use a pastry cutter or your fingers to work the butter into the mixture until it resembles coarse crumbs
Gently fold in the fresh blueberries and chopped sage leaves
In a separate bowl, whisk together the heavy cream, egg, and vanilla extract
Pour the wet mixture into the dry mixture and stir until just combined
Be careful not to overmix; the dough should be slightly sticky
Turn the dough out onto a floured surface and knead it gently a few times until it comes together
Shape the dough into a circle about 1 inch thick
Cut it into 8 wedges
Place the scones on the prepared baking sheet, leaving some space between them
Bake in the preheated oven for 15-18 minutes, or until the scones are golden brown on the outside and cooked through
Allow the scones to cool on a wire rack for a few minutes before serving
