This Quinoa Chickpea Tabbouleh Salad is a healthy and refreshing vegan take on the classic tabbouleh salad. It is full of protein, fiber, and bright flavors. Its great as a side dish for any meal or as a light lunch.
Ingredients:
- 1 cup cooked quinoa
- 1 can chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
Add the cooked quinoa, chickpeas, cherry tomatoes, cucumber, red onion, parsley, and mint to a large bowl
Mix lemon juice, olive oil, salt, and pepper in a small bowl with a whisk
Add the dressing to the salad and mix it all together
Put it in the fridge for at least 30 minutes before you serve it so the flavors can mix
