Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
Instructions:
In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon
In a separate bowl, beat the egg and then add the buttermilk, melted butter, and vanilla extract
Mix well
Pour the wet ingredients into the dry ingredients and stir until just combined
Do not overmix; its okay if there are some lumps
Preheat a griddle or non-stick skillet over medium-high heat and lightly grease it with butter or cooking spray
Pour 1/4 cup portions of batter onto the hot griddle for each pancake
Cook until bubbles form on the surface, then flip and cook the other side until golden brown
Repeat the process with the remaining batter
Serve the pancakes hot with your favorite toppings, such as maple syrup, fresh berries, or whipped cream
