Ingredients:
- 8 oz rotini pasta
- 1 cup cherry tomatoes, halved
- 1/2 cup sliced black olives
- 1/2 cup diced red bell pepper
- 1/2 cup diced green bell pepper
- 1/4 cup diced red onion
- 1 cup diced pepperoni
- 1 cup mozzarella cheese, cubed
- 1/4 cup grated Parmesan cheese
- 1/2 cup chopped fresh basil leaves
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and black pepper to taste
Instructions:
Follow the directions on the package to cook the rotini pasta until it is al dente
Run cold water over the drain and rinse
Put the cooked pasta, pepperoni, black olives, red and green bell peppers, red onion, mozzarella cheese, Parmesan cheese, and chopped basil leaves in a large bowl
Add the olive oil, red wine vinegar, minced garlic, dried oregano, salt, and black pepper to a small bowl
Use a whisk to mix the ingredients
Add the dressing to the pasta salad and mix it all together until its well covered
The pasta salad should be put in the fridge for at least an hour with the lid on so that the flavors can mix
Give the salad one last toss and taste to see if the seasoning needs to be changed before serving
