Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 1/2 tsp baking soda
- 1 1/2 tsp cocoa powder
- 1 1/2 tsp salt
- 1 cup vegetable oil
- 1 cup buttermilk
- 2 large eggs
- 2 tbsp red food coloring
- 1 1/2 tsp vanilla extract
- 1 1/2 tsp white vinegar
- For Cream Cheese Frosting:
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 tsp vanilla extract
Instructions:
Start by heating the oven to 350F 175C
Sift the flour, sugar, baking soda, cocoa powder, and salt together in a bowl
In a different bowl, mix the eggs, red food coloring, vanilla extract, buttermilk, and vegetable oil with a whisk
Slowly add the wet ingredients to the dry ones and mix them together until the batter is smooth
You can line a muffin tin with cupcake liners
Put about two thirds of the batter into each liner
In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean
Let the cupcakes cool all the way down on a wire rack after taking them out of the oven
Melt the cream cheese and butter together
Then, beat them together until the frosting is smooth and creamy
Add the vanilla extract and powdered sugar and keep beating until everything is well mixed and fluffy
Once the cupcakes are cool enough to handle, use a knife or a piping bag to frost them with the cream cheese frosting
Add red velvet cake crumbs or sprinkles if you want
Serve and have fun
