- 1 medium head cauliflower, cut into florets
- 1/2 cup cornstarch
- 1/4 cup soy sauce
- 2 tablespoons maple syrup
- 2 tablespoons rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 2 tablespoons sesame oil
- 2 tablespoons sesame seeds
- Green onions, chopped, for garnish
- Cooked rice, for serving

Preheat oven to 425F 220C
Line a baking sheet with parchment paper
In a large bowl, toss cauliflower florets with cornstarch until evenly coated
Spread cauliflower out on the prepared baking sheet in a single layer
Bake for 20-25 minutes, or until cauliflower is golden brown and crispy
While cauliflower is baking, prepare the sauce: In a small saucepan, combine soy sauce, maple syrup, rice vinegar, garlic, and ginger
Bring to a simmer over medium heat and cook for 2-3 minutes, stirring occasionally, until sauce thickens slightly
Once cauliflower is done, transfer it to a large mixing bowl
Pour the sauce over the cauliflower and toss to coat evenly
Drizzle sesame oil over the cauliflower and toss again to combine
Sprinkle sesame seeds over the cauliflower and toss once more
Garnish with chopped green onions
Serve hot over cooked rice
