This split pea soup is a classic that is filling, tasty, and hearty. Great for a warm meal on a cold day.
Ingredients:
- 1 lb dried split peas
- 1 ham hock or 1 cup diced ham
- 3 carrots, chopped
- 3 celery stalks, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 6 cups chicken or vegetable broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions:
Rinse the split peas under cold water and drain
Place all ingredients in a slow cooker
Cover and cook on low for 8-10 hours or high for 4-6 hours, until peas are tender
Remove the ham hock, if using, and shred the meat
Return the meat to the soup
Discard the bay leaf
Season with salt and pepper to taste
Serve hot and enjoy
