Ingredients:
- 1 lb boneless, skinless chicken breasts, diced
- 1 cup onion, finely chopped
- 1 cup celery, chopped
- 1 cup bell pepper, diced
- 2 cloves garlic, minced
- 2 tbsp Cajun seasoning
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp cayenne pepper adjust to taste
- 6 cups chicken broth
- 2 cups water
- 2 cups uncooked egg noodles
- 1 can 14 oz diced tomatoes, undrained
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions:
Put olive oil in a big pot and heat it over medium-low heat
Put in the chicken dices and cook until they turn brown
Take it out of the pot and set it aside
Add the onion, celery, and bell pepper to the same pot and cook them until they get soft
Cajun seasoning, thyme, oregano, and cayenne pepper should all be added
Just a minute or two
Add water and chicken broth
Bring up the temperature
Add the egg noodles that arent cooked yet and the diced tomatoes with their juice
Keep cooking until the noodles are soft
Put the cooked chicken back in the pot
Add pepper and salt to taste
Let the flavors blend for another 10 to 15 minutes by simmering
Serve hot with fresh parsley on top
