Ingredients:
- 2 cups all-purpose flour
- 1/2 cup vegan butter, softened
- 1 cup granulated sugar
- 1/4 cup unsweetened applesauce
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- Vegan sprinkles optional
Instructions:
Preheat oven to 350F 175C
In a large bowl, cream together vegan butter and sugar until light and fluffy
Add applesauce and vanilla extract, mix until well combined
In a separate bowl, whisk together flour, baking powder, and salt
Gradually add dry ingredients to wet ingredients, mixing until a dough forms
Roll dough into small balls and place them on a baking sheet lined with parchment paper
Gently press down on each ball to flatten slightly
If desired, sprinkle vegan sprinkles on top of each cookie
Bake for 10-12 minutes, or until edges are lightly golden
Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely
