Citrusy Roasted Beet Goat Cheese Salad

A refreshing and nutritious salad with a delightful blend of flavors and textures. Roasted beets, tangy goat cheese, and citrusy notes make this salad a perfect side dish or a light meal on its own.

Ingredients:

  • 4 medium-sized beets, peeled and diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 cups mixed greens e

  • , spinach, arugula, and kale
  • 1 cup canned black-eyed peas, drained and rinsed
  • 1/2 cup crumbled goat cheese
  • 1/4 cup chopped walnuts
  • 2 oranges, peeled and segmented
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 2 tablespoons balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions:

Preheat your oven to 400F 200C

In a bowl, toss the diced beets with 2 tablespoons of olive oil, salt, and pepper

Spread them in a single layer on a baking sheet

Roast the beets in the preheated oven for 20-25 minutes or until they are tender and slightly caramelized

Remove from the oven and let them cool

In a large salad bowl, combine the mixed greens, roasted beets, black-eyed peas, crumbled goat cheese, chopped walnuts, and orange segments

In a small bowl, prepare the dressing by whisking together lemon zest, lemon juice, balsamic vinegar, extra virgin olive oil, honey, salt, and pepper

Drizzle the dressing over the salad and toss gently to combine all the ingredients

Serve immediately, garnished with additional goat cheese and walnuts if desired
